Okay, this is not easy. But I’m working on it. I ate a sensible breakfast instead of my usual sugary diet shake (does that make sense to anyone? Can’t believe I never noticed before!) For lunch I left my desk (yes, the world did grind to a halt) and had a lovely bowl of Healthy Choice soup in the teacher’s lounge. And for dinner I made–hold onto your hats–Turkey Ham and Spinach Quiche with Caramelized Onions. ooohh…
Snack was a cup of yogurt. Better than my bowl o’ sugar, but not as healthy as I’d hoped. I’ll be making better yogurt choices next time.
Yes, quiche can be good for you. Especially when last week I might well have stopped for a Whopper with cheese, large onion rings and a diet Coke on the way home. And doubly especially when Hope and I eat spinach maybe twice a year, but both of us declared it “good!!” last night.
Shameless plug for an awesome service–I’m using a Menu Mailer from www.savingdinner.com. A three month trial subscription is $10, she sends you five recipes and side suggestions, and a shopping list, separated by area in the grocery store. She has several mailer choices–low carb, vegetarian, southern hemisphere, crockpot, frugal, and just the regular one. The quiche is from…I forget. The frugal one, I think. It’s from a sample menu on the site. I subscribed to the Body Clutter one, but it starts tomorrow.
It doesn’t get easier without hiring a cook, people. All the recipes are fast, easy to prepare, the directions are clear and easy to read, and the shopping list is a godsend. Unless, unlike me, you enjoy spending hours at the grocery store and then going back because you forgot things. And I’ll bet you that you save money, even if you don’t use the frugal menu.
